Russian Vinegret, or Probiotic Vegetable Salad

Ingredients

medium golden potatoes
boiled, cooled, peeled and chopped

roasted beet
chopped into bite sizes

small carrot
finely chopped
1-2
lacto fermented pickles
chopped

green apple
finely chopped

cup
lacto fermented sauerkraut

green onions
chopped

tablespoons
fresh dill
chopped

tablespoons
extra virgin olive oil

pickle or sauerkraut juice
(liquid from the jar)
salt and pepper to taste
Instructions
Mix all ingredients in a bowl, and allow to rest in the fridge for a couple of hours or overnight for the flavor to develop.
