Cardamom Quinoa Porridge with Pear and Almond

Quinoa porridge has joined my cold weather recipe lineup in my effort to end domination of buckwheat and millet that I grew up with. When I made plain quinoa in the past, I found it to be bland and funny smelling during cooking. Since then, I discovered that it easily takes on flavors of other ingredients, and has a pleasant texture that goes with everything, from salads to desserts.

This porridge has become regular part of my meals, breakfast and beyond. It is so simple to make, and the ingredients are who wholesome and nourishing that there is no reason not to have it for a light dinner as well as a hearty breakfast. My favorite spice to go with it is cardamom but cinnamon makes it feel a lot like oatmeal. I have actually added quinoa to my kids’ oatmeal without their official consent on a couple of occasions, trying to diversify their content of their bellies.

HOW TO MAKE CARDAMOM QUINOA PORRIDGE WITH PEAR AND ALMOND

Ingredients
1/2 cup quinoa (try sprouted quinoa!)
1 cup homemade almond milk  (how to make almond milk)
1/2 cup water
1/2 teaspoon vanilla extract
1/2 teaspoon ground cardamom
A pinch of salt
Top with:
1/2 cup almond milk + 1/2 finely chopped pear + 2 tablespoons toasted almonds

Instructions
Rinse 1/2 cup quinoa in a fine mesh sieve.
Place quinoa, 1 cup almond milk, 1/2 cup water, 1/2 teaspoon vanilla, 1/2 teaspoon cardamon and a pinch of salt in a small sauce pan.

Bring to boil, reduce heat to low, cover and simmer for 15 minutes, stirring occasionally, until liquid is absorbed.
Remove from heat, let stand covered for 5 minutes, fluff with a fork.
Serve with 1/2 cup almond milk, half chopped pear and some toasted almonds.

Ingredients

  • 1/2 cup quinoa try sprouted quinoa!
  • 1 cup homemade almond milk how to make almond milk
  • 1/2 cup water
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom
  • A pinch of salt

TOP WITH

  • 1/2 cup almond milk
  • 1/2 chopped pear
  • 2 tablespoons toasted almonds

Instructions

  • Place quinoa, 1 cup almond milk, 1/2 cup water, 1/2 teaspoon vanilla, 1/2 teaspoon cardamon and a pinch of salt in a small sauce pan.
